CGNW Recommends: Camber
On the corner of Holly St and Bay, Camber is an artisan coffee and tea shop with an upscale food menu. I’ve been there just twice, and each time I was enchanted by the attention to detail in everything from their decor to the presentation of my hors d’oeuvres.
Recently I learned more about the company, and it turns out that the attention to detail goes beyond the bud vases and delicate glass teapots.
The cafe (follow @CamberHolly on Instagram), with its gourmet menu (try the “Not a Pumpkin Spice Latte” or the Herb Baked Feta) is just a part of the larger operation that roasts its own coffee, teaches brewing classes, and holds the 2019 Cascadia Weekly Best of Bellingham for Best Brunch, Best Coffeehouse, and Best Barista.
Camber sources plenty of its ingredients from Whatcom and Skagit county providers, and is integrating sustainable practices into daily operations - like sending the end-of-day oil to be converted to biodiesel at East of Eden Farm.
Coming up, you can take a manual brewing class on December 11th, and celebrate the holidays with Camber on December 12th (wear your ugly sweater!).
